INGREDIENTS

Meatballs

  • 1 lb. ground turkey
  • 1/2 cup almond meal
  • 1/2 cup diced onion
  • 1 Tbsp. ground flax
  • 1 tsp. sea salt
  • 1/4 tsp. garlic powder
  • 1/4 tsp. chili powder

Ketchup

  • 6-oz. can tomato paste
  • 2 Tbsp. apple cider vinegar
  • 1 tsp. Dijon mustard
  • 1/2 tsp. garlic powder
  • 1/4 tsp. dry mustard
  • 1/4 cup water
  • 1/4 tsp. cinnamon
  • 1/4 tsp. sea salt

METHOD

  1. Preheat oven to 350 degrees.
  2. In a medium mixing bowl, combine ground turkey and other ingredients for meatballs and mix well.
  3. Form into 8 balls and place in a muffin tin, pressing slightly down with your hand.
  4. In a separate bowl, combine homemade ketchup ingredients.
  5. Spoon small dollops onto each turkey muffin and bake, uncovered, until cooked through, about 20 minutes.
  6. Serve with remaining ketchup.
